Two food trucks, one pink dream.

Before there were pink walls on S. Division, there was a refurbished food truck and a family that decided Grand Rapids needed their cooking. Here's how Taquero Mucho came to be.

2021 → 2024

It started on wheels

Rafael Caballero refurbished the first food truck himself in 2021. People found it, loved it, and came back — so the family added a second truck in 2022.

By May 2024, Rafael and Rosa Diaz-Salmeron opened the doors to their first brick-and-mortar on S. Division. Same cooking, finally with a roof — and a whole lot of pink.

Alborada built the brand

The name "Taquero Mucho" and the whole hot-pink, flower-walled, neon-lit world it lives in? That's the work of their daughter, Alborada Caballero-Diaz.

No agency, no focus group — just a daughter who knew exactly what her family's food deserved to look like. Three generations, one very pink idea.

The pink sauce says it all

The house pink crema isn't a gimmick — it's the whole point. The food and the room are made of the same thing: the sign out front says Mexican food made with love, and they mean every word.

Made from scratch, served on clay, finished in pink. That's Taquero Mucho.
